On longing, and the roast

There is a word in Japanese, kogare (焦がれ), for a particular kind of wanting. Not a passing wish, but a longing that smoulders — to ache for something, to be drawn toward it.

Its first character, 焦, is the mark of scorch and fire. It is, quite literally, the character of roasting. The feeling it borrows from, 恋, is love. We liked that the name held both: the patience of caring about something, and the heat that transforms it.

That is the standard we set for every batch. Not coffee made to a schedule, but coffee made because we wanted it to be good — single origins chosen one at a time, roasted to suit their character, and sent while they are still close to the roast.
